Avocado Wontons

Now that I am living in South America, I crave my favorite foods from different restaurants I used to frequent. So I decided to make a similar recipe to one I ate at a cafe in Sobe. The avocados here are delicious, just like butter.

The original recipe calls for sundried tomatoes. I had no luck in finding any here, so I’m just omitting it. No biggie. You gotta work with what you got sometimes.

My version of avocado wontons

Ingredients:

- 1 ripe avocado (hass kind)

- 1 pack of wonton wrappers

- a bunch of green onion

- sesame oil

-soy sauce

- a pinch of salt

- 1 egg

- 1/2 of a large red onion

- 1/2 of an orange

What to do:

I first decided I wanted to cook the onions down a bit. I cooked them in a combination of veg oil and sesame oil. On medium heat so not to burn the sesame oil. You can skip this step if you like.

Clean and chop your green onion. Half your avocado and make a criss-cross pattern on the side so it’ll scoop out in little pieces.

Mix the cooled onion mixture with the green onion and avocado. Now, I don’t have crazy wonton wrapping skills so I went the easy route. If you got the fancy method down then I need a lesson from you. Scoop the mixture into the wonton, putting the mixture vertically. Then, beat your egg in a bowl and with your finger add some to all sides to seal the wonton. Fold one side over the other like a present. Then seal the edges together.

Wonton stuffing

Prepare a pan with water. Set it to a low boil, dropping the wontons in gently. Some might break open, that happened to some of mine. No big deal. Scoop them out to dry.

I had to add more water after each batch

Drain the water out of the pan and clean it. Fill it with veg oil and drop in the wontons, careful to drain any water that accumulated in the plate & the pan. Water + oil = not good. Splatter will occur. As it happened, one of my wontons had alot of water in it and I had to step back a bit. So be very careful with the oil/water situation.

Plating

Cook them till they lightly brown on one side and set them off to drain. In another bowl, mix a bit of the juice of the orange, tasting along the way, with some soy sauce. I also used a few drops of sesame seed oil. Mix that up. In your serving bowl, add the mixture you just made with the soy sauce. Also add some green onions. Place the fried wontons on top and maybe some more green onion and a few pieces of avocado.

      At the Mega-you know cause the Chifa influence here is strong, so they sell all kinds of stuff…I even got oyster sauce!

  3. Wow, my wife and I will have to try those out! We might have a little trouble finding avocados in south east asia though, sometimes they’re at the market, most of the time they aren’t. Looks delicious!

      If you could find the sundried tomatoes that go in them that would be great too. Alas, no sundried tomatoes here for me in Cusco!
